In a blender, combine the strawberries, 1 tablespoon of sugar, and 1 tablespoon of water. Blend until smooth. Pour the red mixture into the bottom of each popsicle mold, filling each about one-third of the way. Place the mold in the freezer for 10-15 minutes, or until slightly set.

Rinse the blender and combine Greek yogurt, honey, vanilla extract, and 1 tablespoon of water. Blend until smooth. Pour the white yogurt layer over the frozen strawberry layer, filling another one-third of the mold. Insert popsicle sticks into the center. Freeze for another 10-15 minutes until the white layer is set.

Rinse the blender again and combine the blueberries, 1 tablespoon of sugar, and 1 tablespoon of water. Blend until smooth. Pour the blue mixture on top of the white layer, leaving a small space at the top to allow for expansion as it freezes. Freeze the popsicles for at least 4 hours, or until fully solid.

To release the popsicles, run the molds under warm water for 10-15 seconds. Gently pull on the sticks to remove.
