In a medium bowl, combine the orange juice and 1 tablespoon of granulated sugar. Whisk until the sugar is fully dissolved. Set aside.

In a separate bowl, whisk together the heavy cream, whole milk, vanilla extract, honey, and the remaining 1 tablespoon of sugar until well combined and slightly frothy.

Pour a small layer of the orange juice mixture into the bottom of each popsicle mold, about one-third full. Place the molds in the freezer for 30 to 45 minutes or until the layer is semi-solid.

Once the orange layer is partially frozen, carefully pour the vanilla cream mixture on top of the orange layer, leaving a little room at the top of the mold to allow for expansion during freezing.

Insert popsicle sticks into the molds, ensuring they stand upright. If the vanilla mixture is too liquid and doesn’t hold the sticks in place, freeze the popsicles for an additional 10 minutes to slightly firm up before inserting the sticks.

Freeze the popsicles for at least 4-6 hours, or until completely solid.

To remove the creamsicles from the molds, run the molds under warm water for a few seconds to loosen them, then gently pull the popsicles out.
