Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
Cook the egg noodles according to the package instructions. Drain and set aside.
In a large mixing bowl, combine the cream of mushroom soup, milk, salt, and black pepper. Whisk until smooth.
Add the cooked egg noodles, drained tuna, frozen peas and carrots, and 1 1/2 cups of shredded cheddar cheese to the bowl. Gently mix until evenly combined.
Pour the mixture into the prepared baking dish and spread it out evenly.
