Peel the bananas and cut each banana in half crosswise, so you end up with 8 banana pieces total.

Insert a popsicle stick into the flat, cut end of each banana piece, being careful not to push the stick all the way through. Set aside.

Line a baking tray with parchment paper to prevent sticking.

In a microwave-safe bowl, combine the chocolate and coconut oil, and microwave in 20-30 second increments, stirring between each increment until the chocolate is fully melted and smooth. Alternatively, you can melt the chocolate using a double boiler on the stovetop.

Hold a banana pop by the stick and dip it into the melted chocolate, evenly coating it. Allow any excess chocolate to drip off.

Immediately sprinkle your desired toppings (sprinkles, nuts, shredded coconut, etc.) onto the chocolate-covered banana pop while the chocolate is still wet.

Place each finished banana pop on the parchment-lined tray. Repeat until all the banana pieces are coated.
