Place the seedless watermelon cubes into a blender and blend until smooth. This should yield approximately 3 1/2 to 4 cups of watermelon puree.

Pour the watermelon puree through a fine mesh strainer into a large bowl to remove any pulp, if desired.

In a small bowl or measuring cup, mix the freshly squeezed lemon juice, granulated sugar (if using), and water until the sugar is fully dissolved.

Combine the watermelon puree and the lemonade mixture, stirring well to incorporate.

Carefully pour the mixture into ice pop molds, leaving a small amount of space at the top for expansion during freezing.

Insert ice pop sticks into the molds. If your molds don't have built-in stick holders, allow the mixture to partially freeze for about 1 hour before inserting the sticks so they stay upright.

Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

To remove the ice pops from the molds, run the outside of the molds under warm water for a few seconds to help release the pops.
