In a large bowl, combine ground beef, salt, black pepper, Italian seasoning, and minced garlic. Mix gently with your hands until just combined. Divide into 4 equal portions and shape into burger patties about ¾ inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking. Set aside.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Thinly slice the onion and add it to the skillet. Cook for 5 minutes, stirring occasionally, until softened.

Add balsamic vinegar and brown sugar to the onions. Stir well and reduce heat to low. Cook for another 10 minutes, stirring occasionally, until onions are caramelized and syrupy. Remove from heat and set aside.

Heat a grill or a grill pan to medium-high heat. Brush the grates with the remaining olive oil. Place the burger patties onto the grill. Cook for approximately 4-5 minutes per side, or until the internal temperature reaches 160°F (71°C) for medium. During the last minute of cooking, place a slice of fresh mozzarella on top of each patty and close the lid to melt the cheese.

Toast the brioche buns lightly on the grill for 1-2 minutes, until golden and warm.

Assemble the burgers: Spread 1 tablespoon of basil pesto on the bottom half of each bun. Place the cooked patty on top, followed by a slice of tomato, 2 fresh basil leaves, a generous spoonful of balsamic caramelized onions, and then the top half of the bun.
