A dusting of powdered sugar adds a touch of whimsy, making them as visually appealing as they are delicious. Ready in just 15 minutes, this quick and versatile recipe serves up two portions of nostalgia with a modern twist.
Lay out the bread slices on a work surface and trim off the crusts. You can save the crusts for another use or discard them.
Spread 1 tablespoon of creamy peanut butter evenly on one side of all 4 pieces of bread.
Spread 1 tablespoon of jelly or jam on top of the peanut butter on 2 of the bread slices (these will be the base layers).
Place one bread slice with just peanut butter on top of each jelly-spread slice, peanut butter side down, creating two sandwiches.
Optional: If you'd like to add a drizzle of honey for an extra layer of sweetness, carefully peel back the top bread slice of each sandwich and drizzle 1/2 teaspoon of honey on the jelly layer. Reassemble.
Using a sharp knife, carefully slice each sandwich into 4 small squares or triangles, creating 8 mini stacks.
Optional: For toasted stacks, heat a skillet over medium heat and melt 1 teaspoon of butter. Place the sandwich pieces in the skillet and cook until golden brown, about 1-2 minutes per side.
Arrange the mini stacks on a serving plate and dust with powdered sugar for garnish, if desired.
Serve immediately and enjoy your P B J Stacks with a glass of milk or your favorite beverage!
