Enjoy them warm straight out of the oven or refrigerate for a convenient grab-and-go option throughout the week!
Preheat your oven to 375°F (190°C).
Lightly grease a 12-cup muffin tin with non-stick cooking spray to prevent sticking.
Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped spinach to the skillet and cook for 2–3 minutes until wilted. Remove from heat and set aside to cool slightly.
In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Stir in the shredded cheddar cheese, Parmesan cheese, and the cooked spinach mixture.
Evenly distribute the mixture into the prepared muffin tin cups, filling each about 3/4 full.
Place the muffin tin in the preheated oven and bake for 18–20 minutes, or until the quiches are set and slightly golden on top.
Remove from the oven and allow the quiches to rest in the tin for 5 minutes before carefully removing them.
Serve warm, or let them cool and refrigerate for a quick grab-and-go breakfast!
