Preheat your oven to 200°C (400°F).
Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut the sprouts in half lengthwise.
Place the halved Brussels sprouts on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to ensure even coating.
Peel and finely mince the garlic cloves. Sprinkle the minced garlic over the Brussels sprouts.
Roast the Brussels sprouts in the preheated oven for 18-20 minutes, stirring halfway through, until they are tender and caramelized on the edges.
While the sprouts are roasting, zest the lemon and juice it. Set the zest and juice aside.
When the Brussels sprouts are finished cooking, remove them from the oven and immediately drizzle with lemon juice. Toss to coat evenly.
Sprinkle the lemon zest and optional Parmesan cheese over the top for added flavor. If desired, add a pinch of chili flakes for some heat.
Serve the lemon Brussels sprouts warm as a side dish or a delicious snack.
