Wash and peel the potatoes. Dice them into 1-inch cubes.
Slice the kielbasa into 1/4-inch thick rounds and set aside.
Core and seed the red and green bell peppers, then slice them into thin strips.
Peel and thinly slice the yellow onion.
Mince the garlic cloves and set aside.
Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium-high heat.
