Slice the Polish sausage into 1/2-inch thick rounds.
Wash and deseed the bell peppers. Slice them into thin strips.
Peel the onion and slice it into thin rings.
Mince the garlic cloves.
Heat the olive oil in a large skillet over medium heat.
Add the sliced sausage to the skillet and cook for 4-5 minutes, stirring occasionally, until browned on both sides. Remove the sausage from the skillet and set aside.
In the same skillet, add the sliced onions and cook for 2-3 minutes until they begin to soften.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the sliced bell peppers to the skillet and cook for 5-7 minutes, stirring frequently, until the peppers are tender but still slightly crisp.
Sprinkle the smoked paprika, black pepper, and salt over the vegetables. Stir well to combine.
Return the sausage to the skillet and toss to combine with the peppers and onions. Cook for an additional 3-4 minutes to heat through.
Taste and adjust seasoning, if needed.
Garnish with chopped fresh parsley if desired, and serve immediately.
