Quench your thirst with this refreshing Iced Rhubarb Tea, a vibrant and fruity twist on classic iced tea. This recipe combines the tangy sweetness of simmered rhubarb with the boldness of black tea, balanced perfectly with a splash of zesty lemon juice. Lightly sweetened and served over ice, it's an invigorating drink perfect for summer gatherings or a quiet afternoon treat. Garnished with fresh mint leaves and lemon slices, this stunning beverage is as visually appealing as it is delicious. Easy to make with just a handful of ingredients, this cooling homemade tea is a must-try for rhubarb lovers and iced tea enthusiasts alike.
Rinse the rhubarb stalks thoroughly and chop them into 1-inch pieces.
In a medium saucepan, combine the chopped rhubarb and 6 cups of water.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 15 minutes, or until the rhubarb has softened and broken down.
Remove the saucepan from heat and strain the mixture into a large bowl or pitcher through a fine-mesh sieve or cheesecloth, pressing down on the rhubarb solids to extract as much liquid as possible. Discard the solids.
Stir the sugar into the hot rhubarb liquid until dissolved.
Add the black tea bags to the hot liquid and let them steep for 5 minutes. Remove the tea bags and discard them.
Stir in the lemon juice and let the tea cool to room temperature.
Once cooled, transfer the tea to the refrigerator to chill for at least 2 hours.
To serve, fill glasses with ice cubes, then pour the chilled rhubarb tea over the ice.
Garnish with fresh mint leaves and lemon slices, if desired. Serve immediately and enjoy!
