Featuring protein-rich shelled edamame blended with velvety tahini, zesty lemon juice, and a hint of garlic, this recipe offers a delightful balance of earthy and tangy flavors. A splash of soy sauce and a dash of cumin add depth, while optional chili powder garnish provides just the right kick. Perfect for dipping fresh vegetables, pita chips, or crackers, this quick and easy dip comes together in just 15 minutes, making it an ideal choice for parties, snacks, or meal prep. Healthy, versatile, and irresistibly smooth, this edamame dip will quickly become a go-to crowd pleaser!
Bring a medium pot of water to a boil over high heat.
Add the frozen shelled edamame to the boiling water and cook for 5 minutes, or until tender. Drain and allow to cool slightly.
In a food processor, combine the cooked edamame, water, lemon juice, tahini, olive oil, soy sauce, garlic, cumin, salt, and black pepper.
Blend the mixture until smooth, scraping down the sides of the food processor as needed. If the mixture is too thick, add a bit more water, 1 tablespoon at a time, until the desired consistency is reached.
Taste and adjust seasonings as necessary, adding more salt, lemon juice, or cumin if desired.
Transfer the dip to a serving bowl and sprinkle with chili powder for garnish, if using.
Serve immediately with your choice of fresh vegetables, pita chips, or crackers. The dip can also be refrigerated for up to 3 days.
