📝 Instructions

10 steps
1

In a saucepan, combine the water, milk, and saffron strands (if using). Heat this mixture over low heat until it's warm. Do not let it boil. Set it aside.

2

In a heavy-bottomed pan or skillet, heat the ghee on medium heat.

3

Add the cashews, almonds, and raisins to the ghee. Sauté until the nuts are golden and the raisins puff up. Remove them with a slotted spoon and set aside for garnish.

4

To the same pan, add the semolina (suji). Stir continuously over medium heat, roasting it until it becomes golden and emits a nutty aroma. Be careful not to burn it.

5

Once the semolina is roasted, lower the heat and slowly pour in the warm milk-water mixture while stirring constantly to avoid lumps. Be cautious, as the mixture may splatter.

6

Continue stirring and let the semolina absorb the liquid. The mixture will thicken as it cooks.

7

Add the sugar and crushed cardamom pods to the pan. Stir well to dissolve the sugar completely.

8

Cook the halva for another 3-4 minutes while stirring, until it reaches a soft, pudding-like consistency and begins to pull away from the sides of the pan.

9

Remove the Suji Halva from heat and transfer it to a serving dish.

10

Garnish the halva with the sautéed nuts and raisins. Serve warm and enjoy!
