Creamy, tangy, and packed with flavor, Buttermilk and Chive Mashed Potatoes take your classic comfort food to the next level. This recipe combines buttery russet potatoes with the subtle tang of warm buttermilk and the fresh, mild onion-like taste of finely chopped chives for a side dish thatβs as vibrant as it is satisfying. Perfectly seasoned with freshly ground black pepper and a touch of salt, these mashed potatoes are irresistibly smooth and fluffy, thanks to the simplicity of a potato masher or ricer. Ready in just 40 minutes, itβs an ideal accompaniment to roasted meats, holiday feasts, or a weeknight dinner in need of a gourmet twist. Garnish with extra chives, and watch this crowd-pleaser become a new favorite.
Peel the russet potatoes and cut them into evenly-sized chunks, about 2 inches each.
Place the potato chunks into a large pot and cover them with cold water. Add 1 tablespoon of salt to the water.
Bring the water to a boil over medium-high heat, then reduce the heat to maintain a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.
While the potatoes are cooking, heat the buttermilk in a small saucepan over low heat until warm. Do not let it boil. Also, finely chop the fresh chives and set them aside.
Once the potatoes are cooked, drain them well in a colander and return them to the pot. Allow them to sit for 1-2 minutes to let excess moisture evaporate.
Add the unsalted butter to the pot with the potatoes, then mash them with a potato masher or ricer until smooth and no lumps remain.
Slowly stir in the warm buttermilk, adding a little at a time, until the desired consistency is reached.
Fold in the fresh chives and season the mashed potatoes with freshly ground black pepper and additional salt to taste.
Serve the buttermilk and chive mashed potatoes warm, garnished with extra chives if desired.
