Rinse the wild rice thoroughly under cold water. Add the wild rice and 3 cups of water to a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and most of the water is absorbed. Drain any excess water and let the rice cool to room temperature.

Meanwhile, prepare the citrus fruits. Peel and segment the orange and grapefruit, removing as much membrane as possible. Collect the juice from any leftover membranes into a small bowl. Juice the lemon into the same bowl.
