📝 Instructions

9 steps
1

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove sausage from the pot and set aside.

2

In the same pot, add the remaining tablespoon of olive oil. Add the diced onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.

3

Stir in the minced garlic and cook for an additional minute.

4

Add the crushed tomatoes and chicken broth to the pot. Stir well to combine.

5

Add the cooked sausage back into the pot along with the bay leaves, Cajun seasoning, dried thyme, salt, pepper, and hot sauce. Stir to combine and bring to a simmer.

6

Once simmering, add the sliced okra to the pot. Simmer for about 15 minutes, allowing the flavors to meld and the okra to soften.

7

Add the shrimp to the pot and cook until the shrimp are pink and cooked through, about 3-5 minutes.

8

Remove the bay leaves from the gumbo.

9

Garnish the gumbo with chopped parsley and sliced green onions before serving.
