Peel and thinly slice the yellow onion.

In a skillet, heat olive oil over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, until the onions are soft and caramelized, about 15 minutes. Remove the onions from the skillet and set aside.
