Peel and thinly slice the yellow onion. Clean the portabella mushrooms with a damp cloth and slice them into thin strips. Mince the garlic cloves.

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook for 8-10 minutes, stirring occasionally, until soft and golden brown. Remove the onions from the skillet and set aside.

In the same skillet, add another tablespoon of butter, followed by the portabella mushrooms. Sauté for 5-7 minutes until tender and slightly browned. Add the minced garlic and cook for an additional 1-2 minutes. Remove the mushrooms and garlic mixture from the skillet and set aside.

In a mixing bowl, combine the ground beef, Worcestershire sauce, salt, and black pepper. Mix gently but thoroughly. Divide the mixture into 4 even portions and shape each into a patty about the size of the rye bread slices.

Wipe out the skillet and heat it over medium-high heat. Cook the beef patties for 3-4 minutes per side, or until the internal temperature reaches 160°F. Remove the patties from the skillet and set aside.

Butter one side of each slice of rye bread using the remaining butter. To assemble the melts, place a slice of bread butter-side down in the skillet. Layer with one slice of Swiss cheese, a beef patty, a portion of the sautéed onions and mushrooms, and another slice of Swiss cheese. Top with another slice of bread, butter-side up.

Cook each sandwich over medium heat for 2-3 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted. Repeat with the remaining sandwiches.
