Preheat your oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or lightly grease it.
Lightly flour a clean surface and roll out the pizza dough into a large circle or rectangle, approximately 1/4-inch thick.
Spread the basil pesto evenly over one half of the dough, leaving a 1-inch border around the edges.
Layer the shredded turkey, mozzarella cheese, sun-dried tomatoes, and baby spinach on top of the pesto. Sprinkle with parmesan cheese if desired.
Fold the empty half of the dough over the filling to create a half-moon shape, and press the edges tightly together to seal. Crimp the edges by pinching or using the tines of a fork.
