Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.

In three separate microwave-safe bowls, divide the dark, milk, and white chocolate chips evenly. Add 1 teaspoon of coconut oil to each bowl.

Start with the dark chocolate bowl. Microwave in 20-second increments, stirring between, until the chocolate is fully melted and smooth (about 1-2 minutes total). Be careful not to overheat.

Pour the macadamia nuts into the melted dark chocolate and stir gently to coat each nut evenly.

Using a fork or spoon, remove each chocolate-coated macadamia nut one by one, allowing excess chocolate to drip off, and place it onto the prepared baking sheet.

Once all the nuts are coated in dark chocolate, repeat the same melting and coating process with the milk chocolate. Dip the already dark chocolate-covered nuts into the melted milk chocolate for the second layer. Again, allow excess chocolate to drip off before placing them back on the baking sheet.

Finally, melt the white chocolate in the same way and drizzle it over the double-coated macadamia nuts using a spoon or a piping bag for decorative streaks.

If desired, sprinkle a light pinch of sea salt over the top for a sweet-salty balance.

Allow the chocolates to fully set by placing the baking sheet in the refrigerator for about 15-20 minutes.

Once set, transfer the triple chocolate-covered macadamia nuts to an airtight container and store in a cool, dry place. They will keep for up to 2 weeks (if they last that long!).
