Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions, but reduce the cooking time by 1-2 minutes to keep the shells slightly firm. Drain and rinse under cold water to stop the cooking process, then set them aside on a clean towel.
