Cut the chicken breast into bite-sized pieces, about 1-inch each.
In a bowl, combine buttermilk, garlic powder, paprika, black pepper, and salt. Add the chicken pieces and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 4 hours for better flavor.
In a shallow dish, mix all-purpose flour, cornstarch, and cayenne pepper.
In a second shallow dish, beat the eggs.
In a third shallow dish, place the Panko breadcrumbs.
Remove the chicken pieces from the buttermilk marinade, letting excess drip off. Dip each piece into the flour mixture, then into the beaten eggs, and finally into the Panko breadcrumbs, pressing gently to adhere.
Heat vegetable oil in a deep skillet or Dutch oven over medium heat to 180°C (350°F).
Carefully add the chicken bites in batches, frying for 3-4 minutes per side until golden brown and cooked through. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
To make the supreme dipping sauce, whisk together mayonnaise, honey, Dijon mustard, and lemon juice in a small bowl. Adjust seasoning to taste.
Serve the chicken bites hot with the supreme dipping sauce on the side. Enjoy!
