Preheat your oven to 180°C (356°F) and line a baking sheet with parchment paper.
Wash the spinach thoroughly, drain, and roughly chop it. Set aside.
Dice the onion finely and mince the garlic.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for another minute.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

Arrange the parcels on the prepared baking sheet and brush the tops with the remaining olive oil or melted butter for crispiness.
Bake in the preheated oven for 20-25 minutes or until the parcels are golden and crispy.
