Ideal for summer cookouts or as an appetizer for any gathering, these skewers are packed with vibrant citrus and garlic aromas, while a hint of optional red pepper flakes brings a spicy kick. Serve them hot off the grill with extra scampi sauce for dipping, and watch these crowd-pleasing skewers disappear in minutes!
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a small saucepan over medium heat, melt the butter. Add the olive oil and stir to combine.
Add the minced garlic to the butter-oil mixture and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
Remove the saucepan from heat and stir in the parsley, lemon zest, lemon juice, salt, black pepper, and red pepper flakes (if using). Let it cool to room temperature.
Place the raw shrimp in a large bowl and pour three-quarters of the scampi sauce over them. Toss to coat evenly. Reserve the remaining sauce for brushing while grilling.
Cover the bowl and marinate the shrimp in the refrigerator for 15-30 minutes (do not exceed 30 minutes as the lemon juice can 'cook' the shrimp).
Thread the shrimp onto the skewers, piercing them through both the head and tail ends to secure them in place. You can fit about 4-5 shrimp per skewer.
Preheat your grill or grill pan to medium-high heat. Grease the grates lightly to prevent sticking.
Grill the shrimp skewers for 2-3 minutes on each side, brushing them with the reserved scampi sauce as they cook. The shrimp are done when they turn opaque and slightly charred.
Remove the skewers from the grill and let them rest for 1-2 minutes. Serve immediately, garnished with additional parsley if desired.
