In a large mixing bowl, break the cooked salmon into small flakes using a fork.
To the bowl, add breadcrumbs, mayonnaise, Dijon mustard, 2 tablespoons of chopped fresh dill, chopped green onion, egg, lemon zest, lemon juice, salt, and black pepper. Mix until well combined.
Shape the salmon mixture into 8 patties, each approximately 3 inches in diameter. Place the patties on a plate and refrigerate them for 10 minutes to help them hold their shape.
While the salmon cakes are chilling, prepare the dill sauce. In a small bowl, combine Greek yogurt, 2 tablespoons of mayonnaise, 2 tablespoons of fresh dill, lemon juice, minced garlic, salt, and black pepper. Mix well and set aside.
Heat 2-3 tablespoons of olive oil in a large skillet over medium heat.
