📝 Instructions

11 steps
1

Preheat your oven to 180°C (350°F).

2

Wash the spinach thoroughly and chop it into small pieces.

3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sauté the chopped onion and minced garlic until softened, about 5 minutes.

4

Add the spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

5

In a large mixing bowl, combine the cooked spinach mixture with crumbled feta cheese, ricotta cheese, beaten eggs, chopped dill, chopped parsley, salt, and black pepper. Stir until well mixed.

6

Brush a 9x13-inch baking dish with olive oil. Layer one sheet of phyllo dough on the bottom of the dish, allowing the edges to hang over the sides. Lightly brush it with melted butter. Repeat this process with six sheets, one at a time, brushing each with butter.

7

Spread the spinach and cheese mixture evenly over the layered phyllo dough.

8

Cover the filling with the remaining six sheets of phyllo dough, layering and brushing each sheet with butter as before. Fold the overhanging edges of the phyllo over the top to seal the pie.

9

Use a sharp knife to gently score the top layer of phyllo into portions, making sure not to cut all the way through.

10

Bake in the preheated oven for 40 minutes, or until the phyllo is golden brown and crisp.

11

Remove from the oven and let the pie cool for 10 minutes before slicing and serving. Enjoy your Rustic Greek Pie!
