πŸ“ Instructions

8 steps
1

Season the pork chops on both sides with salt and black pepper.

2

Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.

3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the chopped shallot and garlic, cooking for 2-3 minutes until softened and fragrant.

4

Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Simmer for 2-3 minutes to reduce the wine slightly.

5

Add the chicken stock to the skillet and stir. Place the pork chops back into the skillet and let them simmer in the sauce for about 8-10 minutes, or until they are cooked through (internal temperature should reach 145Β°F or 63Β°C). Remove the pork chops again and set aside, keeping them warm.

6

Lower the heat to medium-low and stir in the heavy cream, chopped tarragon, and lemon juice. Simmer the sauce for 2-3 minutes, allowing it to thicken slightly. Taste and adjust seasoning with additional salt and pepper, if needed.

7

Return the pork chops to the skillet, spooning the sauce over them. Cook for 1-2 more minutes to warm through.

8

Serve the pork chops with the creamy tarragon wine sauce drizzled generously on top. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
