Peel and thinly slice the russet potatoes using a mandoline or sharp knife. Set aside.
Heat olive oil in a large skillet over medium-high heat. Season the pork chops on both sides with salt, pepper, garlic powder, and onion powder.
Sear the pork chops in the skillet for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
