Preheat your oven to 400°F (200°C). Lightly grease 4 oven-safe ramekins or bowls with olive oil and set them aside.
On a floured surface, roll out the pizza dough into a rough rectangle about 1/4 inch thick. Cut the dough into 4 pieces, each large enough to cover the ramekins with some overhang.
In a medium bowl, stir together the pizza sauce, cooked Italian sausage, chopped bell peppers, sliced black olives, and dried oregano. Adjust seasoning to taste if needed.
Begin assembling the pot pies: Add 1/4 cup of shredded mozzarella cheese to the bottom of each ramekin, then divide the pizza sauce mixture evenly among the ramekins. Top each with a layer of pepperoni slices and a sprinkle of Parmesan cheese.
Carefully drape a piece of pizza dough over each ramekin, pressing the edges around the rim to seal. Trim any excess dough hanging too far over the sides.
In a small bowl, whisk together the egg and water to create an egg wash. Brush the egg wash over the dough to help it brown beautifully in the oven.
Using a sharp knife, cut a small slit or poke a few holes in the center of the dough to allow steam to escape during baking.
Place the ramekins on a baking sheet to catch any drips, and transfer to the preheated oven. Bake for 20-25 minutes, or until the dough is golden brown and puffed.
Remove from the oven and let the pot pies cool for 5-10 minutes before serving. Be cautious, as the filling will be very hot!
Serve as is or alongside a fresh salad for a complete meal.
