📝 Instructions

11 steps
1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

2

Scrub the potatoes clean under running water, then pierce each one with a fork a few times to allow steam to escape during baking.

3

Rub the potatoes with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of salt. Place them on the prepared baking sheet and bake for 45 minutes or until tender when pierced with a knife. Remove from the oven and allow to cool for about 10 minutes.

4

Cut each potato in half lengthwise and use a spoon to scoop out most of the flesh, leaving about 1/4 inch intact around the edges. Save the scooped-out potato flesh for another recipe like mashed potatoes or potato cakes.

5

Brush the insides and outsides of each potato skin with the remaining 1 tablespoon of olive oil. Sprinkle the insides with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

6

Place the potato skins, cut side up, back onto the baking sheet. Bake for 10 minutes or until the edges begin to crisp up.

7

Remove the skins from the oven and spoon about 2 teaspoons of pizza sauce into each. Spread it evenly across the bottom of each skin.

8

Sprinkle mozzarella cheese evenly into the potato skins, then top with mini pepperoni slices, grated Parmesan cheese, and a sprinkle of dried oregano. Add red pepper flakes if desired for a spicy kick.

9

Return the loaded potato skins to the oven and bake for another 10-12 minutes, or until the cheese is melted and bubbly with golden spots.

10

Remove from the oven and sprinkle chopped green onions over the top. Allow to cool for a few minutes before serving.

11

Serve these pizza pan potato skins warm as an appetizer, snack, or side dish. Enjoy!
