Once the sugar syrup has reached 250Β°F, carefully and slowly pour it into the beaten egg whites while the mixer is running on medium speed. Be sure to pour in a thin, steady stream to avoid scrambling the eggs.

Increase the mixer to high speed, and beat the mixture until it becomes thick, holds its shape, and loses its glossy appearance. This can take 5-7 minutes. The mixture should still be warm but not overly hot to the touch.

Add the vanilla extract and chopped pecans (if using), and fold them gently into the mixture using a spatula.

Working quickly, use two spoons to drop spoonfuls of the mixture onto the prepared baking sheet. If the mixture becomes too stiff to work with, you can add a few drops of hot water and stir until it loosens slightly.

Allow the divinity to cool and set at room temperature for 1-2 hours. Once firm, store it in an airtight container at room temperature for up to 1 week.
