Preheat your oven to 200°C (400°F).
Wash and pat dry the red bell pepper. Place it on a baking sheet and roast in the preheated oven for about 10 minutes, turning it halfway, until the skin is slightly charred and softened.
While the pepper is roasting, clean the button mushrooms using a damp paper towel and slice them thinly. Set aside.
Once the red bell pepper has finished roasting, remove it from the oven and let it cool for 5 minutes. Peel off the skin, remove the stem and seeds, and slice the flesh into thin strips.
Wash and dry the mixed salad greens. Arrange them on a large serving platter or individual plates.
In a small bowl, prepare the chive vinaigrette. Finely chop the fresh chives and combine them with olive oil, white wine vinegar, Dijon mustard, honey, salt, and black pepper. Whisk well until emulsified.
Top the salad greens with the sliced mushrooms and roasted red pepper strips.
Drizzle the chive vinaigrette over the salad, making sure to coat evenly.
Serve immediately and enjoy this vibrant and flavorful salad.
