Add the pitted Medjool dates, ground cinnamon, and orange blossom water to the food processor. Blend until the mixture forms a sticky, cohesive dough.

Scoop out approximately 1 tablespoon of the mixture and roll it into a smooth ball using your palms. Repeat with the remaining mixture to form 15 balls.
