πŸ“ Instructions

9 steps
1

Rinse all the berries under cold water and pat them dry with a paper towel. Hull and slice the strawberries into quarters. Leave the blueberries, raspberries, and blackberries whole.

2

Prepare the gelatin by sprinkling it over 1/4 cup of cold water in a small bowl. Let it bloom for 5 minutes.

3

In a small saucepan over medium heat, combine the granulated sugar and 3/4 cup of water. Stir until the sugar is completely dissolved. Remove from heat and stir in the bloomed gelatin until fully dissolved.

4

Add the lemon juice and sparkling water to the gelatin mixture, stirring gently to combine. Allow the mixture to cool to room temperature.

5

Line a loaf pan (approximately 8 x 4 inches) with plastic wrap, ensuring there is enough overhang to cover the top of the terrine once filled.

6

Arrange a layer of mixed berries at the bottom of the loaf pan. Slowly pour a small amount of the cooled gelatin mixture over the berries to cover them. Repeat with additional layers of berries, ensuring each layer is covered with gelatin before adding the next. Continue until all the berries and gelatin are used, leaving a slight space at the top of the pan for the liquid to settle.

7

Fold the overhanging plastic wrap over the top to cover the terrine. Refrigerate for at least 4 hours or overnight until fully set.

8

To serve, gently peel back the plastic wrap and invert the loaf pan onto a serving platter. Carefully remove the pan and peel away the plastic wrap.

9

Slice the terrine into even portions with a sharp knife. Garnish with fresh mint leaves if desired, and serve chilled.
