Line two baking sheets with parchment paper or non-stick silicone mats and set them aside.

In a medium, heavy-bottomed saucepan over medium heat, combine the granulated sugar, light corn syrup, and water. Stir until the sugar is dissolved.

Attach a candy thermometer to the side of the saucepan, ensuring it doesn't touch the bottom. Bring the mixture to a boil without stirring and cook until it reaches 250°F (hard-ball stage). This should take about 10–12 minutes.

Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff peaks form.

Once the sugar syrup reaches 250°F, remove it from heat. While the mixer is still running on medium-high speed, carefully and very slowly drizzle the hot syrup into the whipped egg whites in a thin stream. This should take 2–3 minutes.

Continue beating the mixture on high speed until it thickens and loses its gloss, about 4–6 minutes.

Quickly add vanilla extract, salt, mini marshmallows, and chopped pecans. Mix just until combined as the mixture will set quickly.

Working quickly, drop heaping spoonfuls of the mixture onto the prepared baking sheets, spacing them about 1 inch apart.

Let the divinity cool and set completely at room temperature for at least 1 hour.

Store in an airtight container at room temperature for up to 2 weeks. Do not refrigerate as it may cause the divinity to weep.
