Transform your holiday dessert table with the timeless charm of Marshmallow Divinity, a melt-in-your-mouth candy thatβs as light as a cloud. This no-bake treat combines a luscious blend of whipped egg whites, velvety marshmallows, and crunchy pecans, all brought together with a hot sugar syrup for that signature airy texture. Infused with vanilla and a touch of salt for balance, each bite bursts with sweet, nutty flavor. Perfect for gifting or festive gatherings, this recipe yields beautifully fluffy confections that set easily at room temperature. With just 15 minutes of prep time, Marshmallow Divinity is an irresistible addition to your collection of classic candies.
Line two baking sheets with parchment paper or non-stick silicone mats and set them aside.
In a medium, heavy-bottomed saucepan over medium heat, combine the granulated sugar, light corn syrup, and water. Stir until the sugar is dissolved.
Attach a candy thermometer to the side of the saucepan, ensuring it doesn't touch the bottom. Bring the mixture to a boil without stirring and cook until it reaches 250Β°F (hard-ball stage). This should take about 10β12 minutes.
Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff peaks form.
Once the sugar syrup reaches 250Β°F, remove it from heat. While the mixer is still running on medium-high speed, carefully and very slowly drizzle the hot syrup into the whipped egg whites in a thin stream. This should take 2β3 minutes.
Continue beating the mixture on high speed until it thickens and loses its gloss, about 4β6 minutes.
Quickly add vanilla extract, salt, mini marshmallows, and chopped pecans. Mix just until combined as the mixture will set quickly.
Working quickly, drop heaping spoonfuls of the mixture onto the prepared baking sheets, spacing them about 1 inch apart.
Let the divinity cool and set completely at room temperature for at least 1 hour.
Store in an airtight container at room temperature for up to 2 weeks. Do not refrigerate as it may cause the divinity to weep.
