Juice 2 of the limes into a small bowl. Cut the remaining lime into wedges for serving.
Finely mince the garlic cloves and set aside.
In a medium bowl, whisk together the lime juice, olive oil, honey, cumin, paprika, salt, pepper, and water to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for 30 minutes to 2 hours.
Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
Remove the chicken from the marinade, letting excess drip off, and set the remaining marinade aside.
Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
While the chicken cooks, pour the reserved marinade into a small saucepan. Bring it to a boil over medium-high heat for 2 minutes, then reduce the heat and simmer for another 3-4 minutes to use as a glaze.
Remove the chicken from the grill and let it rest for 5 minutes. Drizzle the reduced marinade over the chicken.
Sprinkle the chicken with fresh cilantro and serve with the optional lime wedges.
