📝 Instructions

8 steps
1

Roll the lemons on a countertop to help release their juices. Then cut them in half and juice them using a citrus juicer. You should end up with about 1 cup of freshly squeezed lemon juice. Strain the juice to remove pulp and seeds.

2

In a small saucepan, combine 0.75 cups of granulated sugar and 1 cup of water. Heat over medium heat, stirring occasionally, until the sugar dissolves completely. This creates a simple syrup. Remove from heat and let it cool.

3

In a large pitcher, combine the lemon juice, cooled simple syrup, and the remaining 3 cups of water. Stir well.

4

Add the sliced strawberries and fresh mint leaves to the pitcher. Use a wooden spoon to lightly muddle the strawberries and mint to release their flavors without over-crushing them.

5

Refrigerate the lemonade mixture for at least 30 minutes to allow the flavors to meld together.

6

When ready to serve, fill glasses with ice cubes and pour the lemonade mixture over the ice, filling each glass 2/3 full.

7

Top each glass with club soda to add a fizzy twist. Gently stir to combine.

8

Garnish with additional mint leaves or a lemon slice on the rim of each glass, if desired, and serve immediately.
