📝 Instructions

9 steps
1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with cooking spray.

2

Peel and dice the potatoes into chunks. Bring a large pot of salted water to a boil, add the potatoes, and cook until fork-tender (about 15 minutes).

3

While the potatoes cook, slice the onions thinly. Heat 2 tablespoons of butter in a skillet over medium heat and cook the onions, stirring occasionally, until caramelized (approximately 15-20 minutes). Remove from heat and set aside.

4

In the same pot used for the potatoes, bring fresh water to a boil and cook the egg noodles according to the package instructions until al dente. Drain and set aside.

5

Drain the cooked potatoes and return them to the pot. Add 4 tablespoons of butter, milk, sour cream, 1 1/2 cups of cheddar cheese, salt, and black pepper. Mash until smooth and creamy.

6

Spread half of the cooked egg noodles evenly in the prepared baking dish. Top with half of the mashed potato mixture and half of the caramelized onions. Repeat with the remaining noodles, potatoes, and onions.

7

Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the casserole.

8

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

9

Let the casserole cool for 5 minutes before serving. Enjoy your Lazy Pierogie Casserole warm!
