Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with cooking spray.
Peel and dice the potatoes into chunks. Bring a large pot of salted water to a boil, add the potatoes, and cook until fork-tender (about 15 minutes).
While the potatoes cook, slice the onions thinly. Heat 2 tablespoons of butter in a skillet over medium heat and cook the onions, stirring occasionally, until caramelized (approximately 15-20 minutes). Remove from heat and set aside.
