Preheat the oven to 400°F (200°C).
Wash the baking potatoes thoroughly under running water and dry them with a clean kitchen towel.
Using a fork, carefully poke a few holes into each potato to allow steam to escape during cooking.
Rub each potato with olive oil, ensuring they are lightly coated, and sprinkle with a pinch of salt to season the skin.
Place the potatoes directly on the oven rack or a baking tray and bake for 55–60 minutes or until the skin is crispy and the inside is soft when pierced with a knife.
Once the potatoes are cooked, remove them from the oven and allow them to cool slightly for 5 minutes.
Carefully slice each potato down the middle without cutting all the way through. Gently push the ends towards the center to open up the potato.
Place 1 teaspoon of butter inside each potato and fluff the inside with a fork to mix with the butter.
Sprinkle 1/4 cup of grated cheddar cheese over each potato and add your choice of toppings, like cooked sweetcorn, diced ham, or a dollop of sour cream.
