📝 Instructions

10 steps
1

Peel the potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with cold water.

2

Add a generous pinch of salt to the water, bring to a boil, and cook the potatoes until they are fork-tender, about 15-20 minutes.

3

While the potatoes are boiling, prepare the caramelized onions. Heat the olive oil in a large skillet over medium heat.

4

Add the thinly sliced onions and cook, stirring occasionally, for 15 minutes. Sprinkle with 1 teaspoon of sugar and continue cooking for another 10-15 minutes until deeply golden and caramelized. Add the minced garlic in the last 2 minutes of cooking and stir to combine. Remove from heat and set aside.

5

Drain the cooked potatoes and return them to the pot. Let them sit for a minute to allow excess moisture to evaporate.

6

Add the butter, heavy cream, prepared horseradish, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the potatoes.

7

Using a potato masher or a hand mixer, mash the potatoes until smooth and creamy. Adjust seasoning with more salt or horseradish to taste.

8

Fold half of the caramelized onions into the mashed potatoes, reserving the other half for garnish.

9

Transfer the mashed potatoes to a serving dish and top with the reserved caramelized onions.

10

Serve warm and enjoy!
