Preheat your oven to 375°F (190°C).

In a medium skillet over medium-high heat, cook the ground beef until fully browned, breaking it into crumbles as it cooks. Drain any excess fat.

Add the taco seasoning and water to the skillet with the cooked beef. Stir well and simmer for 2-3 minutes, or until the seasoning is fully incorporated and the mixture has thickened slightly. Remove from heat and let cool slightly.

Roll out the refrigerated pie crusts and use a 3-inch round cookie cutter to cut out 12 circles from the dough. If needed, re-roll scraps to get enough circles.

Gently press the dough circles into the wells of a nonstick muffin tin to form tart shells. Prick the bottoms lightly with a fork to prevent puffing.

Spoon about 1 tablespoon of the taco meat mixture into each tart shell. Sprinkle shredded cheddar cheese over the top of the meat in each tart.
