Preheat a panini press or grill pan on medium-high heat.

Layer 2 slices of Manchego cheese and 2 slices of ham on each roll. Close the sandwiches gently.
Spread 1 tablespoon of butter evenly on the outside of each roll, covering both the top and bottom surfaces.
Place the sandwiches on the preheated panini press or grill pan. Cook for 3β5 minutes, pressing down gently until the bread is golden brown and crispy, and the cheese is melted.
While the paninis are cooking, prepare the dipping sauce. In a small bowl, mix together the mayonnaise, ketchup, honey, and paprika until smooth and well combined.
Remove the paninis from the heat and let them cool for 1β2 minutes. Slice each panini in half diagonally.
Serve the paninis warm with the dipping sauce on the side.
