Creamy, cheesy, and packed with hearty goodness, this Ham Broccoli Rice and Cheese Casserole is the ultimate comfort food for busy weeknights or cozy family dinners. This one-dish wonder combines tender broccoli florets, savory diced ham, fluffy white rice, and melty cheddar cheese, all brought together with a creamy base of cream of mushroom soup and a touch of milk. With just 15 minutes of prep time and a short bake in the oven, this casserole is as easy as it is satisfying. Perfect for using up leftover ham, itβs a kid-friendly meal loaded with flavor and a dose of veggies! Serve it alongside a crisp side salad for a complete, crowd-pleasing dinner.
Preheat your oven to 375Β°F (190Β°C). Lightly grease a 9x13-inch casserole dish with non-stick cooking spray.
In a large skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened and translucent.
If using fresh broccoli florets, steam them in a pot of boiling water for 3-4 minutes until bright green and tender-crisp. If using frozen broccoli, thaw and drain thoroughly.
In a large mixing bowl, combine the cooked rice, steamed broccoli, diced ham, cooked onions, cream of mushroom soup, milk, garlic powder, black pepper, and 1 1/2 cups of shredded cheddar cheese. Mix well until evenly coated.
Taste the mixture and adjust the seasoning with additional salt if needed (keep in mind the ham and soup may already be salty).
Transfer the mixture to the prepared casserole dish, spreading it out evenly.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbling and the cheese on top is melted and golden brown.
Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy!
