Thinly slice the Vidalia onion.
Heat a skillet over medium heat and add the olive oil. Sauté the sliced onions with a pinch of salt and black pepper for 3-4 minutes, or until they are soft and slightly caramelized. Remove from the skillet and set aside.
Butter one side of each slice of sourdough bread evenly.
On the unbuttered side of two slices of bread, lay down 1 slice of cheddar cheese on each.
Add 2 slices of dill pickles and half of the sautéed Vidalia onions to each slice of cheese-covered bread.
Top with the second slice of cheddar cheese for each sandwich.
Place the remaining slices of bread on top, with the buttered side facing outward.
Heat a clean skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is fully melted.
Remove the sandwiches from the skillet and let them cool for 1-2 minutes before slicing and serving.
