📝 Instructions

7 steps
1

Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and season with salt and black pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

3

In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter melts, add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes, or until fragrant.

4

Stir in the frozen peas and cook for 2-3 minutes, or until they are heated through.

5

Return the cooked shrimp to the skillet, along with the cooked fusilli pasta. Add the lemon juice, lemon zest, and 1/2 cup of the reserved pasta water. Toss everything together to coat the pasta evenly. Add more pasta water if needed to create a light sauce.

6

Stir in the chopped parsley and adjust seasoning with additional salt and pepper, if necessary.

7

Serve immediately, topped with grated Parmesan cheese if desired.
