📝 Instructions

9 steps
1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set the pasta aside.

2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat.

3

Add the shrimp to the skillet, season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper, and cook for 2-3 minutes on each side, until pink and opaque. Remove the shrimp from the skillet and set aside.

4

In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Sauté for about 1 minute, or until fragrant.

5

Add the cherry tomatoes, crushed red pepper flakes, and a pinch of salt to the skillet. Cook for 3-4 minutes, stirring occasionally, until the tomatoes soften and release some of their juices.

6

Stir in the spinach and cook for 1-2 minutes, until wilted.

7

Add the cooked shrimp back to the skillet along with the lemon zest, lemon juice, and reserved pasta water. Stir to combine, and let it simmer for 1-2 minutes.

8

Toss the drained pasta with the shrimp and vegetable mixture until well-coated with the sauce. Adjust seasoning with additional salt and black pepper, if needed.

9

Serve immediately, garnished with grated Parmesan cheese and fresh parsley, if desired. Enjoy!
