With simple ingredients and minimal prep, it’s a delicious way to upgrade your mornings without the hassle. Serve it as is or with your favorite salsa or hot sauce for an extra kick!
Crack the eggs into a small bowl. Add the salt and black pepper, then whisk until fully combined.
Heat a medium-sized nonstick skillet over medium heat and add 1/2 tablespoon of butter. Once melted, pour in the whisked eggs and cook, stirring gently, until they are softly scrambled. Remove from the heat and set aside.
Wipe the skillet clean and place it back over medium heat. Add the remaining 1/2 tablespoon of butter and let it melt.
Place the flour tortilla in the skillet. Sprinkle half of the shredded cheese evenly over one half of the tortilla.
Layer the scrambled eggs on top of the cheese, then add your choice of cooked bacon, sausage, or vegetables if desired. Sprinkle the remaining cheese over the eggs and fillings.
Fold the empty half of the tortilla over the filling to create a half-moon shape. Press gently with a spatula to hold it together.
Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Remove from the skillet, let cool slightly, and slice into wedges. Serve immediately and enjoy!
