📝 Instructions

8 steps
1

In a large mixing bowl, combine the ground lamb, onion, garlic, ginger, curry powder, ground cumin, salt, black pepper, egg, and breadcrumbs. Mix well until evenly combined. Divide the mixture into 4 portions and shape into burger patties. Set aside.

2

Preheat the grill or a grill pan to medium-high heat.

3

In a separate bowl, toss the sliced zucchini, red bell pepper, and eggplant with olive oil and a pinch of salt and pepper. Grill the vegetables for 3-4 minutes per side until tender and lightly charred. Remove from the grill and set aside.

4

Grill the lamb patties for about 4-5 minutes on each side or until fully cooked to an internal temperature of 71°C (160°F). Remove from the grill and let the patties rest for a few minutes.

5

To prepare the mint raita, combine the plain yogurt, chopped mint leaves, grated cucumber, ground coriander, and a pinch of salt in a small bowl. Mix well and refrigerate until ready to serve.

6

Toast the burger buns lightly on the grill if desired.

7

Assemble the burgers: Place a grilled lamb patty on the bottom half of a toasted bun, followed by a generous spoonful of mint raita, grilled vegetables, and then the top half of the bun.

8

Serve the curried lamb burgers hot with additional grilled vegetables and mint raita on the side if desired.
