Bright, bite-sized, and bursting with flavor, these Cucumber Cups are the perfect no-cook appetizer for your next gathering. Made from crisp, hollowed-out cucumber slices, these elegant cups are filled with a creamy, herb-infused mixture of cream cheese, Greek yogurt, fresh dill, and a hint of garlic and citrus. Topped with a juicy cherry tomato for added color and flavor, these light, refreshing snacks come together in just 15 minutes with simple ingredients you likely already have in your kitchen. Ideal for summer parties, brunch spreads, or healthy snacking, these Cucumber Cups are as beautiful to serve as they are easy to make, with a naturally gluten-free, crowd-pleasing twist.
Wash and dry the cucumbers thoroughly.
Cut each cucumber into 1.5-inch thick slices, yielding around 8 pieces per cucumber.
Use a melon baller or small spoon to carefully scoop out the center of each cucumber slice, leaving a small base to form a 'cup'. Be careful not to scoop all the way through.
In a medium bowl, combine the cream cheese, Greek yogurt, fresh dill, garlic powder, lemon juice, salt, and black pepper. Mix until smooth and well combined.
Transfer the cream cheese mixture to a piping bag or a plastic bag with the tip cut off.
Pipe the mixture into each cucumber cup until full.
Slice the cherry tomatoes in half and place one half on top of each cucumber cup as a garnish.
Serve immediately or refrigerate for up to 2 hours before serving.
